We all have days when things don’t go exactly as planned. Whether an unexpected chore popped up or you’re just not in the mood to fight with the pots and pans in the cabinet to finally find the one that you need (can you tell this happens to me often?), sometimes schedules get blown and the fabulous dinner plan you had can’t be fulfilled. In many cases this leads to a “what’s for dinner dilemma” where more often then not people choose the dreaded drive-thru as the solution. While there are some healthy choices on those menus, in the face of all the more popular items I’m pretty sure most will go for a burger and fries over a salad if given the option.
There are a few things you can do to get a healthy dinner on the table faster than you can pick up a pizza. First, come up with a few fast meals for your family. You know, meals that can be quickly prepared and served in minimal time. One of our family’s favorite fast dinners is tacos. Just brown some ground beef and voilà…dinner is served! Freezer cooking and batch cooking are also great ways to get dinner on the table without much prep or planning. With freezer cooking you make some meals ahead of time and then pop them in the oven to cook or reheat when you are ready to use them. Batch cooking is similar except that you would just make an extra batch of what you are already preparing and freeze the extra for a later meal. This method is popular with things like sauces, soups, taco meat, and casseroles.
Another option, which requires nothing more than pushing a few buttons on a microwave, is to stock up on a few healthy frozen dinners. Whoa…frozen dinners? Like the ones that TASTE like frozen dinners? Nope! Those aren’t the ones that I’m going to tell you about 🙂

I was so excited to try the Double Fudge Swirl Greek Frozen Yogurt because just like everyone else, I LOVE chocolate! Unfortunately my Walmart stores didn’t have this either so I went with my second choice, Strawberry. It was creamy, refreshing, and delicious. I loved that it had real sugar in it instead of something with an unappealing aftertaste. Not only did it have a great taste but again, also a great price.
